HG Sply's buzzy new drink is delicious, and supports local beekeepers

The Revive the Hive cocktail includes whisky and local honey and lavender.

In honor of National Honeybee Day (Aug. 17), HG Sply on Lower Greenville has created a delicious cocktail called Revive the Hive. It's an elegant take on a whiskey sour, made with 12-year-old Aberfeldy Single Malt Whisky, lemon, a local honey-and-lavender syrup, and a splash of Rothman &Winter Orchard apricot liqueur.

The aged whisky lends a nice roundness, and a frothy egg white (optional, but by all means get it) smooths out the lemony tartness. The lavender syrup and brandylike liqueur impart just the right level of sweetness and subtle flavor notes. It's a perfectly balanced drink.

The bar team at HG Sply created this drink as part of Aberfeldy's Barrels and Bees program, which helps support local beekeepers worldwide. For every drink purchased, Aberfeldy will donate 12 bees to hives at local bee conservancies, such as Harmony Hollow in North Texas. The drink will be available throughout August for $12. You'll have to request the Revive the Hive special. It's not on the menu, but it would make a good addition to it.
