Pastry chef turns Texas slogan ‘Come and take it’ into a buzz-worthy dessert

Yudith Bustos of Four Seasons Dallas reimagined the humble campfire s’more to resemble a smoking cannon.

Yudith Bustos might not be a native Texan, but she’s behind a new epicurean ode to the Lone Star State.

Bustos, who is the executive pastry chef at Four Seasons Resort and Club Dallas at Las Colinas, unveiled her newest creation — the Come and Taste It Lone Star Cigar — this month.

For the dessert, Bustos reimagined the humble campfire s’more to resemble a smoking cigar, reminiscent of the state’s “Come and take it” cannon.

American colonists uttered that famous slogan in 1835, declaring their defiance in returning a cannon given to them by Mexico. The incident sparked the Battle of Gonzales, the first fight of the Texas Revolution.

The historic phrase is a still a point of Texas pride. And for Bustos, it represented a culinary challenge.

Presented under a glass dome filled with smoke, the dessert is a combination of slightly bitter dark Valrhona chocolate rolled in cocoa powder and paired with roasted marshmallow ice cream and house-made graham cookies.

“Once the glass is lifted, smoke escapes, and the aroma of Texas mesquite wood permeates,” Four Seasons said in a press release.

“I’m a chef, yes, but I have no desire to make food. I want to create artful epicurean experiences,” said Bustos, who is from Costa Rica. “Desserts that appeal to all your senses at once. Not to satisfy a craving, but to evoke awe and cause time to stand still. That’s what makes food truly memorable.”

“Come and Taste It” is now available at LAW at Four Seasons Resort and Club Dallas at Las Colinas, 4150 N. MacArthur Blvd. The dessert costs $19.
