We know there’s a bagel boom happening in D-FW right now. Are kolaches next? We hope so.
Houston’s longtime family-owned Kolache Shoppe is moving into Dallas-Fort Worth for the first time, partnering with local franchisees who will open the first store in Celina in fall 2023. Kolache Shoppe has been serving Texas-Czech kolaches, klobasneks and coffee in Houston since 1970. There are three bakeries in Houston, and the Celina shop will be the fourth.
Kolache Shoppe owners Randy and Lucy Hines took over the business in 2014 from founding operator Erwin Ahrens and launched the franchise program in 2018. The North Texas franchisees are husband-and-wife team Jake and Courtney Poulsen, longtime Frisco residents, and Courtney’s parents, Gary and Cindy Mechler.
“We look for people who get the culture and reflect the kindness and welcoming hospitality for which our brand is known,” Randy Hines said in a press release. “Jake and Courtney already embody so much of what we’re trying to convey daily. We’re excited to work with them because of who they are and how they jive with our values.”
The bakery still uses the same 1970 recipe for the pillowy kolache dough. Sweet flavors include apricot, blueberry, peach and strawberry, and savory klobasneks include venison sausage and cheese; bacon and cheese; and Kiolbassa sausage, cheese and jalapeño. The breakfast menu is a standout, with klobasneks stuffed with goodies like brisket, egg and cheddar; ham and Swiss; ranchero egg and cheese; and spinach, egg and cheese.
The drink menu includes coffee options like lattes, cortados and Vietnamese cold brew, plus tea selections such as a chamomile matcha latte.
The 1,558-square-foot space on the historic Celina square will include counter service, indoor and patio dining, and a drive-through.
Celina is considered a North Texas boomtown, reports Dallas Morning News real estate writer Mitchell Parton. The population is estimated to grow to about 350,000 by the time its many developments are built out, including a new Uptown Celina district. The city also plans to expand its downtown, which includes the historic square.
