Georgie by Curtis Stone, as well as Up On Knox, both operated by Courseau Concepts, are transitioning from curbside/takeaway to full service dining room operations on Sept. 1. Georgie reopens for brunch and dinner with a new menu from new executive chef Jason Rohan and executive pastry chef Alexis Rohan, a couple who was previously at Gwen Butcher Shop and Maude, respectively. All employees are required to wear face coverings and have their temperature taken prior to each shift. Additional safety measures within the restaurants include hand sanitizing stations, regular deep cleaning, disposable and digital menus, and contactless payment. 4514 Travis Street, Suite 132, Dallas. The list covers restaurants that opened in 2019 and contains just one Texas spot: Georgie by Curtis Stone, the high-end steakhouse near Highland Park.
The restaurant comes from Australian chef Curtis Stone and Dallas restaurateur Stephan Courseau. Georgie is a new restaurant with old-school glam, described by Robb Report as “an art deco Hollywood dream of yesteryear.” It’s Stone’s first restaurant outside of Los Angeles and is inspired by his restaurant Gwen, located on Sunset Boulevard in Hollywood. GRT Architects in New York City designed the restaurant.
Georgie opened Nov. 18 near Knox-Henderson in Dallas, and from the start it became known for its $390 steak, which we confirmed is the most expensive steak in Dallas. (After ordering, diners also get to choose their own steak knife, a fun perk.)
The dining room is washed in earth tones, with curvy booths offering pops of orange throughout the 100-seat place. Behind the dining room, the expansive kitchen is partially visible behind a scrim. Executive chef Toby Archibald — and, occasionally, Stone — can be spotted cooking back there.
Our former critic called Georgie “an ambitious, fascinating experiment” at its opening. It was one of the highest-profile restaurants of fall-winter 2019 in Dallas.
